THE BEST DARN PANCAKES EVER!

Who doesn’t love pancakes?  Everyone does!  My family is obsessed with this breakfast classic and with good reason! This homemade pancake recipe is not only easy to make but is cake like, fluffy and so darn delicious!  The recipe makes anywhere from 10 – 12 pancakes depending on how big you make them!  Any left overs can be frozen for a quick breakfast at a later date.

BEST DARN PANCAKES EVER

Ingredients:

1 ½ cups all-purpose flour

3 ½ teaspoons baking powder

¾ teaspoon salt

1 tablespoon white sugar

1 ¼ cups milk

1 egg, slightly beaten

3 tablespoons unsalted butter, melted

Directions:

In a large bowl, sift together the flour, baking powder, salt and sugar.  Sifting the dry ingredients together makes for a fluffier pancake.  Make a well in the center and pour in the milk, slightly beaten egg and melted butter. Mix all of the ingredients.  Don’t overmix the batter.  It may be a bit lumpy and that is ok!  Let it sit on the counter for about 10-minutes before cooking.  If you prefer your batter thinner you can add a bit more milk.  The entire process takes about 20 minutes to complete.

Heat a lightly oiled griddle or frying pan over medium-high heat.  Pour or scoop the batter onto the griddle, using approximately ¼ cup of each pancake.  I use a ½ cup measuring cup to scoop out the batter just in case I decide I want larger pancakes.  Flip the pancakes once the batter starts to bubble and the outside edges look like they are staring to cook and the bottom is golden brown.  Brown on both sides. Serve hot, enjoying your pancakes with maple syrup and/or topped with your favorite scoop of fresh fruits such as blueberries, strawberries, bananas, etc.

Any left overs can be place in a zip top bag and frozen for later!  You can reheat them in the microwave or in the toaster.
